Cooking Instructions

Step 1

First, lightly rinse the well-fermented kimchi under running water to adjust its sourness and spiciness. Squeeze out any excess water thoroughly and chop it finely. This will improve the texture when stir-fried.

Step 2

Finely chop the green onions. Since these are mainly for garnish in this recipe, just a small amount is needed. If you don’t have green onions, you can finely mince the white parts of a leek or use parsley flakes or seaweed flakes for added flavor and decoration.

Step 3

Cut the Spam into bite-sized cubes. Cutting them a bit thick will prevent the juices from escaping when cooked, making them more flavorful.

Step 4

Crack 2 fresh eggs into a bowl and gently whisk them until well combined, without creating too much foam. The key to soft scrambled eggs is not to whisk them too vigorously.

Pour 1 bowl of warm cooked rice into a nice serving bowl beforehand. The warm rice will help it meld well with the other ingredients.
