Main Ingredients- 1 can Spam (small size)
- 1 block firm tofu
- 1/2 onion
- 1/2 stalk green onion (scallion)
- 1 Korean chili pepper (optional, for heat)
- 600ml water
Spicy Seasoning Paste- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Jin Ganjang (Korean soy sauce)
- 2 Tbsp Mirin (or cooking wine)
- 2 pinches Black pepper
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Jin Ganjang (Korean soy sauce)
- 2 Tbsp Mirin (or cooking wine)
- 2 pinches Black pepper
Cooking Instructions
Step 1
First, cut the tofu and Spam into bite-sized pieces, about 1.5cm thick, into cubes or rectangles. Thinly slice the onion, cut the green onion diagonally into 1cm thick pieces, and finely chop or slice the Korean chili pepper. (Adjust the spiciness by the number of chili peppers used.)
Step 2
In a small bowl, combine all the seasoning paste ingredients: 1 Tbsp Gochujang, 1 Tbsp Gochugaru, 2 Tbsp Jin Ganjang, 2 Tbsp Mirin, and 2 pinches of black pepper. Stir well until evenly mixed to create a delicious seasoning paste.
Step 3
Prepare a pot or deep pan for the stew. Start by layering the sliced onions at the bottom. The onions will soften and release sweetness as they cook, and help prevent the seasoning from burning. Spoon the prepared seasoning paste evenly over the onions.
Step 4
Nicely arrange the sliced Spam and tofu on top of the seasoning paste, alternating them without overlapping. In the center, artfully place the diagonally sliced green onions and chopped Korean chili peppers for a pop of color.
Step 5
Pour 600ml of water evenly over all the ingredients. Bring to a boil over high heat, cover the pot, and simmer for about 5 minutes. This helps the ingredients begin to cook.
Step 6
Once the stew is bubbling vigorously, reduce the heat to medium. Cover and let it simmer for about 15 more minutes. This allows the flavors to meld beautifully and the broth to reduce slightly, resulting in a delicious Spam and Tofu Stew. Enjoy with a bowl of rice!
