Tired of the same old boiled instant noodles? Today, I’m bringing you a super simple stir-fried noodle recipe packed with plenty of Spam and scallions. The chewy noodles, savory Spam, and fragrant scallions come together for a fantastic meal or snack. Even beginner cooks can whip this up in just 5 minutes, so give it a try!
Main Ingredients- 1 packet instant noodles (choose your favorite brand)
- 10 cm length of green onion (using more is better)
- Canned Spam or similar luncheon meat (to your preference)
- 1/2 Tbsp chili powder (gochugaru)
- 1 egg yolk
Cooking Instructions
Step 1
First, thinly slice the green onions. These will be used to create fragrant scallion oil. Don’t be shy with the amount; more green onions mean deeper flavor!
Step 2
Prepare the Spam by dicing it into bite-sized pieces or mashing it slightly. Be mindful not to use too much Spam, as it can make the dish overly salty. Adjust according to your taste.
Step 3
Boil the instant noodles in plenty of water for just 2 minutes. Cooking them for this short duration prevents them from becoming mushy when stir-fried later, ensuring a perfectly chewy texture.
Step 4
Heat a frying pan over medium-low heat. Add the sliced green onions and gently stir-fry until fragrant scallion oil is rendered. Once the oil is infused with onion aroma, add the prepared Spam and stir-fry until it’s lightly golden brown.
Step 5
To the pan with the cooked Spam and scallion oil, add half of the noodle soup packet and the chili powder. Stir-fry for a moment to toast the spices and deepen the flavor. This step really brings out the umami of the seasoning.
Step 6
Add the par-boiled noodles to the pan and quickly stir-fry with the sauce. To ensure the seasoning coats the noodles evenly and to create a moist texture, gradually add a tablespoon or two of the noodle cooking water as you stir-fry.
Step 7
Transfer the finished stir-fried noodles to a serving bowl. Finally, gently place the egg yolk in the center. This adds a touch of richness and creaminess, completing your delicious Spam and Scallion Stir-fried Noodles!
