Spam and Radish Kimchi Fried Rice

Let’s make some flavorful fried rice with Spam and preserved radish kimchi! While it’s delicious as a side dish, it also adds a surprisingly wonderful taste when incorporated into fried rice. Enjoy a satisfying meal with this simple yet rich-flavored fried rice!
Main Ingredients- 1 can Spam (approx. 200g)
- 3 Tbsp minced preserved radish kimchi (Mu-jjachi)
- 1 Egg
- 5 Tbsp Cabbage (finely chopped)
- 3 Tbsp Carrot (finely chopped)
- 3 Tbsp Green Onion (chopped)
- 3 bowls Cooked Rice (warm, approx. 450g)
Seasoning & Other Ingredients- 3-4 Tbsp Olive Oil
- 1/2 Tbsp Oyster Sauce
- 1 Tbsp Cooking Wine (Mirin)
- 2 Pinches Salt
- 1/2 Tbsp Plum Extract
- Pinch of Black Pepper
- 2 Tsp Chili Flakes (finely minced or whole)
- 1/3 Tbsp Anchovy Sauce
- A little Boiling Water (for cooking vegetables and rice)
- 3-4 Tbsp Olive Oil
- 1/2 Tbsp Oyster Sauce
- 1 Tbsp Cooking Wine (Mirin)
- 2 Pinches Salt
- 1/2 Tbsp Plum Extract
- Pinch of Black Pepper
- 2 Tsp Chili Flakes (finely minced or whole)
- 1/3 Tbsp Anchovy Sauce
- A little Boiling Water (for cooking vegetables and rice)
Cooking Instructions
Step 1
First, heat a pan over medium heat and add 1 Tbsp of olive oil. Add the chopped green onions and stir-fry until fragrant to create scallion oil. Then, add the finely chopped carrot, minced radish kimchi, and finely chopped cabbage in that order and stir-fry. If it seems too dry, add boiling water a tablespoon at a time while cooking the vegetables; this helps reduce oil usage and results in a lighter flavor. Once the vegetables are slightly softened, sprinkle with 2 pinches of salt for seasoning.
Step 2
Cut the Spam into small cubes (about 1cm). Then, blanch it in boiling water for about 1 minute. This step removes impurities and excess fat, leading to a cleaner taste. Add the blanched Spam to the pan with the stir-fried vegetables and cook them together. Again, use boiling water instead of oil, adding a tablespoon at a time, as needed. Once the Spam starts to brown slightly, add 1 Tbsp of cooking wine, a pinch of black pepper, and 1/3 Tbsp of anchovy sauce. Mix well and cook until the flavors are incorporated.
Step 3
In a separate part of the pan (or a different pan), add a little olive oil and crack in the egg. We’ll cook it like a scrambled egg without separating the yolk and white. Cook over low heat until set but still slightly soft.
Step 4
Once the egg is partially cooked (don’t overcook it for a softer texture!), transfer it to the pan with the Spam and vegetable mixture. Mix everything together. Add 1/2 Tbsp of oyster sauce and 2 tsp of minced chili flakes. Stir-fry evenly to ensure the flavors are well distributed. The chili flakes add a nice spicy kick.
Step 5
Now, add the 3 bowls of warm cooked rice to the pan. Break up any clumps of rice with your spatula and stir-fry well. It’s important to gently break apart the rice so it doesn’t clump. If the rice isn’t stir-frying smoothly, add 1-2 tablespoons of boiling water. This helps the rice grains become fluffy and allows the sauce to be absorbed better. Finally, taste the fried rice and adjust the seasoning with salt or anchovy sauce if needed to suit your preference.
Step 6
Once the fried rice is ready, scoop it into a small bowl or ramekin, pressing down gently. Place a plate on top and carefully invert it to unmold the rice. This presentation makes it look even more appealing! Tip: If you make extra fried rice, portion it into individual servings, store in freezer bags, and then reheat in microwave-safe containers when you want a quick meal. This is especially recommended for those living alone!
