How to Make Spam and Potato Stir-fry (Shredded Potato and Spam)
This Spam and Potato Stir-fry is a simple side dish perfect for everyday meals. To prevent the potatoes from breaking apart, they are blanched in salt water before being stir-fried with Spam. The result is a flavorful dish with a delightful texture. (Tablespoons are based on standard Korean rice spoons.)
Ingredients for Spam and Potato Stir-fry- 3 Potatoes (approx. 300g)
- 80g Spam
- 0.3 Tbsp minced garlic (about 1/3 tsp)
- 15g Green onion (chopped)
- 0.15 Tbsp salt (about 1/6 tsp, or to taste)
- 2 Tbsp grapeseed oil
- Pinch of black pepper
- Sesame seeds, a little for garnish
For Blanching the Potatoes- 700ml water
- 0.3 Tbsp coarse salt (about 1/3 tsp)
- 700ml water
- 0.3 Tbsp coarse salt (about 1/3 tsp)
Cooking Instructions
Step 1
First, peel the potatoes and rinse them thoroughly under running water. Then, cut them into strips about 4-5mm thick. Cut the Spam into strips slightly thicker than the potatoes.
Step 2
Prepare the green parts of the green onion by chopping them finely. Measure out 0.3 Tbsp of minced garlic.
Step 3
In a pot, combine 700ml of water and 0.3 Tbsp of coarse salt. Bring to a boil over high heat. Blanching the potatoes in salt water helps them retain their shape and reduces cooking time.
Step 4
Once the water is boiling vigorously, add the shredded potatoes and stir gently.
Step 5
When the water boils again, turn off the heat. Pour the potatoes into a colander and rinse them gently under cold water, stirring carefully. This stops the cooking process and removes excess starch. Shake off any excess water.
Step 6
Add the drained potatoes and 2 Tbsp of grapeseed oil to a frying pan.
Step 7
Stir-fry the potatoes over medium heat for about 3 minutes, stirring frequently to prevent sticking and ensure even cooking.
Step 8
Once the potatoes are cooked, season them with salt to your taste. You can also use MSG-based seasoning (like ‘mat-so-geum’) for added flavor if you prefer.
Step 9
Add the shredded Spam to the pan and stir-fry for about 30 seconds to 1 minute. Avoid overcooking the Spam, as it can become dry.
Step 10
Continue cooking over medium heat, add the chopped green onion and minced garlic. Stir briefly until fragrant, then turn off the heat.
Step 11
Sprinkle with black pepper. Adding pepper at the end helps to reduce any gamey smell from the Spam and enhances the overall aroma.
Step 12
Finally, garnish with a sprinkle of sesame seeds. Your delicious Spam and Potato Stir-fry is now complete! Enjoy it with a bowl of hot rice.
