Here’s the ultimate rice-thief, ‘Spam and Kimchi Roll Stew,’ guaranteed to make you crave two bowls of rice! I made it with a little broth, similar to Kimchi Jjigae, and its spicy, zesty flavor was so inviting. It’s perfect for camping or as a special, hearty meal at home. The delightful combination of aged kimchi and Spam is truly irresistible!
Ingredients- 1 small can of Spam (approx. 200g)
- 250g well-fermented aged kimchi
- 2 stalks of green onion
- 1/2 onion
- 350ml kelp broth
Seasoning- 1 Tbsp soy sauce for soup
- 1 Tbsp fish sauce (anchovy or similar)
- 1 Tbsp red chili flakes (gochugaru)
- 0.5 Tbsp brown sugar
- 1 pinch of black pepper

Cooking Instructions
Step 1
Prepare all your ingredients before you begin cooking. Open the Spam can and have it ready, and lightly squeeze excess liquid from the kimchi.
Step 2
First, let’s make a flavorful broth. Soak dried kelp in 350ml of water for at least 1 hour, or longer, to create a kelp broth. This broth will add a wonderful depth of umami to your dish.
Step 3
Give the Spam a quick ‘shower’ in boiling water for about 1 minute. This helps to remove some of the excess grease, making it taste cleaner. Once drained, slice the Spam into roughly 1cm thick pieces.
Step 4
Cut the onion into thick slices or wedges. Slice the green onions to a similar length as the onion pieces, making them slightly thick for a pleasant texture. It’s helpful to separate the white and green parts of the green onions for later garnish.

Now, let’s roll the Spam with kimchi. Gently unfold the aged kimchi leaves, being careful not to discard too much of the flavorful kimchi paste. Lay a kimchi leaf flat and place one slice of Spam near the stem end.

Starting from the stem end, carefully roll the kimchi leaf tightly around the Spam slice. Roll it firmly but gently to prevent the kimchi from tearing. Once rolled, you’ll have your ‘Spam Kimchi Rolls’.

Choose a deep pot or a Dutch oven. Arrange the prepared Spam Kimchi Rolls around the edge of the pot, standing them up. Tuck any leftover Spam pieces into the empty spaces. Place the sliced onions in the center of the pot.

Take the green onions you prepared. Reserve the bright green tops for later. Tuck the white and lighter green parts of the green onions in between the Spam rolls and into any remaining gaps. This will infuse the dish with a delicious aroma as it cooks.

Now it’s time to add the broth. Pour the kelp broth (after removing the kelp pieces) into the pot.

Add enough kelp broth so that the Spam Kimchi Rolls are almost fully submerged. This ensures that all the ingredients cook evenly and that you’ll have a flavorful broth to enjoy.

Cover the pot and bring it to a rolling boil over high heat for about 5 minutes. You’ll start to smell the delicious aromas as the ingredients begin to soften.

After 5 minutes, stir in the seasonings: 1 tablespoon of soy sauce for soup, 1 tablespoon of fish sauce, 1 tablespoon of red chili flakes (gochugaru), and 0.5 tablespoon of brown sugar. These seasonings will enhance the flavors of the kimchi and Spam.

Reduce the heat to medium and let it simmer for another 3 minutes. Now, add the reserved bright green tops of the green onions decoratively on top.
