My eldest son started a new job and wants to pack his own lunchbox within a month. Apparently, his colleagues are all bringing their lunches due to the worsening COVID situation. So, I spontaneously decided to make some lunchbox side dishes, and this egg roll was made with ingredients I had on hand. Adding chili peppers and Spam to this rolled omelet makes it a perfect lunchbox side dish for office workers. I only tasted it while making it, but it’s truly delicious! My son thanked me, saying he enjoyed it, which made me feel proud. Even if you need to prepare a lunchbox suddenly, try making this delicious Chili Spam Egg Roll with the ingredients you have. Ingredients- 3 large eggs
- A small piece of mild Spam (about 50g)
- 2 Tbsp finely chopped Cheongyang chili peppers
Seasoning & Others- Olive oil or cooking oil
- 2 drops of cooking wine (like Mirin) (to remove egg odor)

Cooking Instructions
Step 1
First, dice the Spam into small pieces, about 0.3 cm after slicing it thinly (around 0.5 cm thick). Finely chop the Cheongyang chili peppers after removing the seeds. If you’re using green onions, chop them finely as well. Having these ingredients prepped beforehand will make the cooking process much smoother.
Step 2
Crack 3 large eggs into a bowl. Add 2 drops of cooking wine to eliminate any eggy smell. Add the diced Spam, chopped chili peppers, and finely chopped green onions (if using). Finally, add a pinch of salt to taste. Remember to adjust the salt considering the saltiness of the Spam itself.
Step 3
Whisk the eggs vigorously with chopsticks or a whisk until smooth and no lumps remain. Ensure the diced Spam, chili, and green onions are evenly distributed throughout the egg mixture. This attention to detail will result in a beautifully patterned and delicious egg roll.
Step 4
Heat a non-stick pan over low heat and add 1-2 tablespoons of olive oil or cooking oil. Spread the oil thinly across the entire pan with a paper towel. Once the pan is warm, pour about one-third of the egg mixture into the pan and spread it thinly. As the egg begins to set, carefully start rolling it from one edge. It’s crucial to control the heat to prevent the egg from burning.
Step 5
After rolling the first layer, push the rolled egg to one side of the pan. Pour another third of the egg mixture into the empty space in the pan. Lift the previously rolled egg to allow the new egg mixture to flow underneath, then roll them together. Repeat this process of adding egg mixture and rolling 2-3 times to create a thick and visually appealing egg roll.
Step 6
Once the final layer of egg is cooked, gently roll the egg roll around the pan to ensure it’s evenly browned on all sides. Let the finished egg roll cool slightly, then slice it into bite-sized pieces (about 1.5-2 cm thick). Slicing it while hot might cause it to fall apart, so allow it to cool completely for clean cuts.
Step 7
Arrange the beautifully sliced Chili Spam Egg Roll in your lunchbox. It pairs wonderfully with a warm bowl of rice for a satisfying lunch. Leftovers can be refrigerated and enjoyed the next day.
