It’s surprising how many people in the US consider Spam ‘junk food’ and avoid it, sometimes even expressing disdain. For middle-aged women like myself who cherished those simple joys of eating warm rice with a slice of Spam in our school lunchboxes, Spam remains a beloved ingredient. Today, I’m recreating that nostalgic flavor with a Spam, Egg, and Mayo Rice Bowl. It’s incredibly simple to make and packed with deliciousness!

This Spam, Egg, and Mayo Rice Bowl is a favorite of mine, so naturally, my husband and daughter love it too. Thinking about it makes me miss my daughter who lives out of state. With its simple ingredients and even simpler preparation, I can confidently recommend this recipe to beginner cooks!

First, gather your ingredients. You’ll need 1 can of Spam, 4 fresh eggs, and 1 cup of finely chopped scallions for that wonderful aroma and flavor.

Slice the Spam according to your preference. I cut it into 7 slices, reserving 2 for Spam musubi and using the remaining 5 for the rice bowl. The amount of Spam can be adjusted to your liking, as it significantly contributes to the bowl’s overall deliciousness.

Dice the Spam into small, bite-sized cubes (about 1cm). Place the diced Spam and chopped scallions into a pan and stir-fry over medium heat until lightly browned. The fat rendered from the Spam and the fragrant scallions will create a delicious base.

You’ll know it’s time to move to the next step when the Spam starts rendering its delicious fat and a subtle, fragrant aroma begins to emanate from the scallions.

Push the fried Spam and scallions to one side of the pan. Add 3 tablespoons of cooking oil to the cleared space. Once the oil is warm, pour in the lightly beaten eggs and scramble them. The key is to cook them until they’re just set and still moist.

Gently move the scrambled eggs to the side of the pan, and pour 1 tablespoon of soy sauce into the empty center. You’ll see the soy sauce start to bubble and reduce slightly from the heat of the pan.

Once the bubbling soy sauce has reduced a bit, add the stir-fried Spam, scallions, and scrambled eggs back into the pan. Mix everything together, ensuring the reduced soy sauce coats all the ingredients evenly.

Continue to stir-fry the ingredients with the reduced soy sauce, scraping the bottom of the pan. This process helps the soy sauce caramelize, adding a wonderful smoky flavor (wok hei) that elevates the dish significantly.

Serve a generous portion of hot, steamed rice into a bowl. Top it with the delicious mixture of Spam, egg, and scallions you just prepared. A bountiful topping makes it even more appealing!
