  • 1 can Spam
  • 1/2 Onion
  • 1/3 Carrot
  • 2 Eggs
  • 3 bowls Cooked Rice

Rice Seasoning

  • 1/2 Tbsp Chicken Stock

Cooking Instructions

First, slice the Spam using a Spam slicer. Using this tool makes it incredibly easy and results in perfectly even slices.

You can use the Spam sliced by the slicer as is, or if you prefer smaller pieces, especially for young children, you can chop it further with a knife. (Consider the saltiness of the Spam when dicing!)

Finely chop the vegetables for the fried rice. Using a food chopper or a knife will save you time in the morning. (Note: This recipe was made after a couple of attempts. The first time, I couldn’t photograph everything due to not having a large enough pan. On the second attempt, in my haste, I even forgot to add the carrot! 😅)

Heat a lightly oiled frying pan. First, add the carrots and stir-fry, then add the onions and cook until they become translucent. Once the onions start to cook, add the sliced Spam and stir-fry until lightly browned, allowing some of the fat to render from the Spam.

Push the ingredients to one side of the pan to create space. Crack the two eggs into the cleared space and scramble them. Once the eggs are partially cooked, gently mix them with the stir-fried vegetables and Spam.

Now, add the 3 bowls of cooked rice. (You can also mix in leftover brown rice or konjac rice if you have it!) Break up any clumps of rice with your spatula and stir-fry until well combined with all the ingredients.

Once the rice and all ingredients are well mixed, add half a tablespoon of chicken stock for an extra burst of umami. (Alternatively, oyster sauce works wonderfully for flavor!) Stir-fry quickly to ensure the seasoning is evenly distributed throughout the rice and ingredients.

And there you have it – delicious Spam and Egg Fried Rice! While it was slightly less colorful without the carrots, adding green elements like chives or green onions would make it even more appealing.

Initially, I made this fried rice for my children and brother-in-law. This time, my nephew, who tried the fried rice I made, kept saying, ‘Auntie, it’s so delicious! It tastes even better because you made it!’ with great enthusiasm.

His compliments were incredibly heartwarming. My own children enjoy my cooking, but they usually only say ‘it’s delicious’ when asked directly. But my nephew spontaneously expressed his enjoyment throughout the meal, which made me truly feel the joy of cooking.
