- A pinch of shredded seaweed (gim)
- Cheongyang chili pepper to taste (optional)

Cooking Instructions
Step 1
First, gently remove any excess brine or white stuffing from the kimchi, then finely chop it. If your kimchi is too sour, you can add a little sugar to balance the flavor.

Blanch the frankfurter sausages in boiling water to remove any impurities. Slice half of them into thin rounds for decoration (like spaceship windows) and the other half into bite-sized pieces for stir-frying.

Finely dice the onion and slice the mushrooms into manageable pieces. Since plenty of kimchi will be used, you can omit the vegetables or add others you prefer, such as carrots or zucchini.

In a mixing bowl, crack two eggs and season with about two pinches of salt. Finely chop the scallions or green onions to prepare for making scallion oil.

Heat a pan over medium-low heat, add cooking oil, and add the chopped scallions. Simmer gently to infuse the oil with a rich scallion aroma, being careful not to burn them.

Once the scallion oil is fragrant, add the chopped sausages, onion, and mushrooms. Stir-fry over medium heat until the vegetables are tender. Stir occasionally to prevent sticking.

Push the sautéed ingredients to one side of the pan. Pour 1 tablespoon of soy sauce into the empty space along the edge of the pan. Let it caramelize slightly to create a delicious ‘wok hei’ or smoky aroma. This step is key to enhancing the flavor of your kimchi fried rice.
