Dried shredded squids (Jinmi-chae) are a classic Korean side dish! If you’re torn between making them spicy or sweet, this recipe introduces a version with plenty of garlic, adding a savory depth and rich flavor that makes you want to eat two bowls of rice! Ingredients- 200g Dried shredded squids (cut into bite-sized pieces)
- 1 Tbsp Mayonnaise (for coating)
- 2 tsp Mirin (or cooking wine)
- 1 tsp Soy sauce
- 1 tsp Fish sauce (or anchovy sauce)
- 1 tsp Sugar
- 1 tsp Minced garlic (approx. 2-3 cloves)
- 1 tsp Ground sesame seeds
Cooking Instructions
Step 1
Before cooking, gently separate any clumped dried shredded squids and cut them into your preferred bite-sized pieces. I find about 5cm (2 inches) works well for a single bite, making it neat and easy to eat.

Add 1 tablespoon of mayonnaise to the prepared dried shredded squids and mix well to coat. The mayonnaise not only tenderizes the squids but also helps the sauce adhere better, giving them a nice sheen.
Step 3
Feel free to adjust the amount of mayonnaise to your liking. If you prefer a moister and softer texture, you can add a little more than 1 tablespoon.

In a small bowl for the sauce, add 1 teaspoon of minced garlic. This is about 2-3 cloves, crushed or finely minced. The pungent aroma and flavor of garlic will significantly enhance the taste of the dried shredded squids.

To the minced garlic, add 2 teaspoons of mirin, 1 teaspoon of soy sauce, 1 teaspoon of fish sauce, and 1 teaspoon of sugar. Stir everything together until the sugar dissolves to create the delicious soy sauce-based marinade.

Now, pour the prepared soy sauce marinade over the dried shredded squids. Gently mix and toss with your hands (‘jobal-jobal’) to ensure the sauce is evenly distributed. Be careful not to knead too vigorously, as this can break the squids.

The saltiness and moisture content of dried shredded squids can vary by brand. Therefore, it’s best not to add all the soy sauce marinade at once. Start with about half, mix, and taste. If it’s not salty enough, add more of the remaining marinade until you reach your desired seasoning.

Once the squids have absorbed the sauce nicely, add 1 teaspoon of finely ground sesame seeds for a nutty aroma and flavor.
