In this season, moms often fret over preparing elaborate lunchboxes for their children’s field trips. While usually packing lunches weekly for kindergarten or school, we’ve decided to create a beautiful lunch to uplift spirits. First, let’s talk about making the soy-marinated shrimp. We used store-bought soy-marinated shrimp from ManGaeRecipe, and upon tasting, found it to be perfectly seasoned without any fishy notes. Thus, we prepared this hearty soy-marinated shrimp rice bowl to ensure a filling meal.

  • 10 Soy-marinated shrimp (store-bought)
  • 1 bowl of cooked rice
  • A few lettuce leaves
  • 1 egg
  • A little mentaiko (cod roe)
  • Wasabi

Cooking Instructions

The first step is to prepare a fried egg, which will enrich the flavor of the rice bowl. Frying it sunny-side up with a slightly runny yolk will make it even creamier and more delicious when mixed with the rice. If you have an avocado, slicing it thinly and serving it alongside is also a great idea. For this recipe, we’ve opted for lettuce and a fried egg to enhance the taste.

Place the lettuce leaves at the bottom of your lunchbox container, followed by the rice. It’s best to use rice that is slightly cooled rather than piping hot, as very hot rice can wilt the lettuce. Drizzle a little of the soy-marinated shrimp’s liquid over the rice to add an extra layer of savory flavor.

Arrange the soy-marinated shrimp attractively on top of the rice. Since we’re using pre-marinated shrimp, they are ready to use immediately. Although we didn’t have avocado this time, we’ve added the fried egg and carefully removed the roe from the mentaiko (cod roe) and placed it neatly on top.

Finally, add a touch of wasabi to balance the richness and add a refreshing kick. This simple soy-marinated shrimp rice bowl is a perfect, hearty meal that can be prepared quickly, making it an ideal choice for a satisfying lunch. It’s a wonderful way to start the day with delicious energy.
