  • 2 ladles of fresh soy marinated crab (including the marinade sauce)
  • 1 serving of good quality pasta noodles
  • 5-6 fresh perilla leaves (깻잎)
  • 1/2 red chili pepper
  • 1/2 green chili pepper

Seasoning & Garnish

  • 2-3 Tbsp extra virgin olive oil
  • 1 swirl of sesame oil (approx. 1/2 tsp)
  • 1 pinch of salt (for boiling pasta)
  • A sprinkle of toasted sesame seeds (for garnish)

Cooking Instructions

Bring a large pot of water to a boil. Add a pinch of salt to season the water, then add the pasta noodles. Cook for about 8 minutes, or 1 minute less than the package instructions. Reserve some of the pasta water before draining.

Drain the cooked pasta and rinse briefly under cold running water. Ensure excess water is removed. Toss the pasta with 1-2 tablespoons of olive oil to prevent sticking and give it a glossy sheen. Spread it on a large plate to cool slightly.

In a large bowl, combine the cooled pasta with 1 swirl of sesame oil (about 1/2 tsp) and 2 ladles of the soy marinated crab sauce. The sauce is key to the flavor, so using a rich, flavorful marinade is recommended. Toss everything together until the pasta is evenly coated with the delicious sauce.

Carefully extract the crab meat from the shells. You can optionally include the roe or tomalley if you like, but for a cleaner taste, just the meat is perfect. Arrange the extracted crab meat over the pasta. Gently press down to help the savory crab flavor meld with the noodles.

Finish with a sprinkle of toasted sesame seeds for nutty aroma. Thinly sliced red and green chili peppers add a vibrant color and a touch of heat.
