Soy-Glazed Pork Stir-Fry with Bonito Flakes
Super Simple Soy-Glazed Pork Stir-Fry Topped with Bonito Flakes
I tried topping a common soy-glazed pork stir-fry with bonito flakes (katsuobushi), and the added salty and umami flavors made it incredibly delicious.
Ingredients- Pork (about 200g, such as pork belly or shoulder)
- 1/2 medium Onion
- 1/2 handful Bonito Flakes (katsuobushi, approx. 5-10g)
Seasoning- 3-4 Tbsp Soy Sauce
- 2 Tbsp Oligosaccharide (or corn syrup/honey)

Cooking Instructions
Step 1
Cut the pork into bite-sized pieces (about 2-3 cm). Peel the onion, cut it into quarters, and then slice it thickly. Place the prepared pork and sliced onion into a frying pan and begin to stir-fry over medium heat.
Step 2
Once the pork starts to turn white and the onion becomes translucent, pour the soy sauce (3-4 Tbsp) and oligosaccharide (2 Tbsp) around the edges of the pan. Quickly stir-fry to coat all the ingredients evenly with the sauce. Stir-frying over high heat at this stage helps the sauce caramelize and become glossy without burning.
Step 3
When the pork is fully cooked and the sauce has reduced to a glossy consistency, turn off the heat. Transfer the finished soy-glazed pork stir-fry to a serving plate. Generously sprinkle the bonito flakes over the top. The heat from the stir-fry will cause the bonito flakes to dance, releasing their smoky aroma and adding an extra layer of delicious umami to this special dish. Enjoy with a warm bowl of rice!
