Soy-Braised Beef with Whole Garlic
Delicious and Easy Soy-Braised Beef – Perfect for Kids’ Side Dish!
Introducing a recipe for chewy and delicious soy-braised beef with whole garlic that the whole family will love. Make a batch and you won’t have to worry about side dishes for a week! It’s great on its own, but when mixed with warm rice and a drop of sesame oil, it’s pure bliss! Especially for garlic lovers, we’ve added plenty of whole garlic for extra flavor. The savory yet slightly sweet taste is truly a rice thief!
Main Ingredients
- 600g Beef Round (for braising)
- 1 Onion
- 1 handful Whole Garlic cloves (approx. 10-15 cloves)
- 2 Bay leaves
Cooking Instructions
Step 1
First, soak the beef round in cold water for about 10 minutes to remove any blood. Removing the blood thoroughly is key to a clean-tasting braised beef.
Step 2
Wash and peel the onion. Lightly rinse the whole garlic cloves under running water. Place the prepared onion and garlic in a pot.
Step 3
Add the blotted beef to the pot, then pour in 500ml of cold water. We’ll be simmering this gently over medium heat rather than high heat.
Step 4
Add 2 bay leaves to effectively remove any gamey smell from the beef. You can omit them if you don’t have any, but they significantly enhance the flavor.
Step 5
Add 5 tablespoons of mirin to help eliminate any fishy odors and tenderize the meat. You can substitute with rice wine or soju if you don’t have mirin.
Step 6
Bring the ingredients to a simmer over medium heat. Once it boils, reduce the heat to low, cover the pot, and let it simmer gently for about 30 minutes until the beef is tender. Skim off any foam that rises to the surface during cooking for a cleaner broth.
Step 7
Check if the beef is cooked through, then carefully remove it from the pot. While still warm, put on disposable gloves and shred the beef by hand along the grain into bite-sized pieces. Shredding it along the grain provides a better texture than cutting it too finely.
Step 8
From the broth in the pot (after removing the beef), discard the bay leaves and onion. Leave the whole garlic in the pot. Return the shredded beef to the pot, and pour in 1/2 cup of soy sauce. You can adjust the amount of soy sauce to your preference.
Step 9
Finally, let’s add a touch of sweetness with 2 tablespoons of oligodang for a glossy braised beef. You can use corn syrup or sugar instead of oligodang.
Step 10
Bring the mixture back to a simmer, then reduce the heat to low. Keep the lid slightly ajar or off and continue to simmer for about 30 more minutes. The broth will thicken as it reduces and the flavors meld into the ingredients, resulting in delicious soy-braised beef! Let it cool slightly, then store in an airtight container in the refrigerator to enjoy for a long time.
