Ingredients

  • Fresh ginger (as much as desired, focus on plump roots)
  • Organic honey (equal weight to ginger, liquid honey recommended)

Cooking Instructions

After sterilizing, do not wipe the inside of the jar with a towel or paper towel. Allow it to air dry naturally, even if there’s some moisture remaining, for optimal hygiene. (Tip for drying jars: https://blog.naver.com/minimam0926/221460798626)

While the sterilized jar is drying, prepare the ginger. Gather as much fresh ginger as you plan to use for your tea.

Peel the ginger carefully and then slice it thinly into matchsticks. If you notice any blueish tint on the ginger, don’t worry – this is a natural part of its ripening process and does not indicate spoilage. Pack the sliced ginger generously into your prepared jar. The ideal ratio of ginger to honey is 1:1 by weight. Even if the ginger seems to fill the jar, the honey will help to compress it. (In this instance, all the ginger was transferred to the larger jar on the right.)

Pour the honey over the ginger, ensuring it covers the ginger completely. Gently stir with a spoon or spatula to help the honey mix thoroughly with the ginger. Make sure there are no dry clumps of ginger or honey.

Leave the jar at room temperature for one full day to allow the ginger’s flavor and aroma to infuse into the honey. After the first day, store the jar in the refrigerator. It’s helpful to write the date you made it on the lid for future reference.
