Delicious Vegetarian Tofu Patties Without Meat (Ganmodoki Recipe)

Ingredients- 1 block firm tofu (approx. 300-350g), drained
- 4+ Tbsp breadcrumbs
- 1 Tbsp (heaping) pancake mix
- 1/3 onion
- 1/2 carrot
- A small bunch of chives
- Pinch of ginger powder (optional)
- 2 Tbsp soy sauce
- Salt to taste
- Sugar to taste
- Vegetable oil or cooking oil, for frying
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
1. If you don’t have breadcrumbs, prepare 2 slices of bread. Process them in a blender or food processor, like the Tupperware Smoothie Chopper, until finely ground into breadcrumbs. Using homemade breadcrumbs ensures freshness.
Step 2
2. Place the firm tofu on a cheesecloth or clean kitchen towel and press firmly with both hands to remove as much moisture as possible. Excess water can make the mixture too wet, so this step is crucial.
Step 3
3. Finely mince the onion, carrot, and chives. Mincing the vegetables finely will help the patties bind well and improve texture. Using a chopping tool like the Tupperware Smoothie Chopper makes this process quick and uniform.
Step 4
4. In a bowl, combine the squeezed tofu, minced vegetables, toasted sesame seeds, pancake mix, and breadcrumbs. Add a pinch of ginger powder if desired for extra flavor (this is optional but helps eliminate any unwanted odors). Mix everything thoroughly. Season with soy sauce, salt, and sugar to your liking.
Step 5
5. Shape the well-mixed dough into small, flattened patties, similar to the shape of ‘donggeurangttaeng’. Aim for a moderate thickness so they cook through evenly.

6. Heat a generous amount of vegetable oil in a frying pan over medium heat, enough to come halfway up the sides of the patties. Once the oil is moderately hot, carefully add the shaped patties, ensuring not to overcrowd the pan. The oil temperature is key; too low and they’ll absorb too much oil, too high and they’ll burn before cooking through.
Step 7
7. Fry the patties, flipping them occasionally, until they are golden brown and look appetizing on both sides. Cook them over medium-low heat to ensure they are cooked through to the center.

8. Once cooked, transfer the patties to a plate lined with two layers of paper towels. This will help absorb any excess oil, making them lighter and cleaner to enjoy.
