Hello everyone! This is ‘Lee Geupsik’. Today, we’re going to make a wonderfully mild and rich ssamjang using soft tofu. This dipping sauce is so good, it’ll make you want to eat bowls of rice! Shall we get cooking? Let’s take a look!
Ingredients (Serves 60)
- Soft Tofu 700g (Use silken or regular soft tofu for a smooth texture)
- Onions 2 medium
- Green Onions 3 stalks (primarily the white parts)
- Minced Garlic 100g (Using freshly minced garlic enhances the flavor!)
- Sugar 100g (Adjust sweetness to your preference)
- Doenjang (Soybean Paste) 300g (Homemade or store-bought)
- Gochujang (Chili Paste) 300g (Adjust spiciness to your preference)
- Sesame Oil 100g (Use domestic sesame oil for a rich nutty aroma)
- Sesame Seeds 50g (Whole or crushed)
Cooking Instructions
Step 1
First, prepare the vegetables that will add depth of flavor to the ssamjang. Finely mince the onions. The sweetness from the onions will make the ssamjang even more delicious. Chop the green onions, focusing on the white parts. The chopped green onions will add a refreshing aroma to the sauce.
Step 2
In a wide pan, combine the doenjang, gochujang, sugar, and minced garlic. Drizzle in 100g of sesame oil and stir gently over medium-low heat. It’s crucial to stir continuously to prevent the pastes from burning. You’ll notice a savory aroma developing as the ingredients meld together.
Step 3
Once the seasoning paste is nicely sautéed, add the prepared soft tofu. Use a spoon or spatula to break up the tofu into larger chunks as you stir-fry. Avoid mashing it too finely, as it can turn into a porridge. Aim for larger pieces to remain. Continue to cook until the tofu is well combined with the sauce and gently heated through.
Step 4
Finally, drizzle in a little more sesame oil and generously sprinkle with whole or crushed sesame seeds to finish. The sesame seeds will add a delightful nutty texture and aroma. Stir everything together, and your delicious soft tofu ssamjang is ready!
