Easy & Delicious Baby Tofu Mushroom Pancake Recipe (No Flour!)
I often make pan-fried dishes for my baby’s side meals because they are easy to prepare with simple ingredients and taste great! Today, we’ll make Tofu Mushroom Pancakes that even toddlers and two-year-olds will enjoy. Their soft texture is a guaranteed hit with kids!
Main Ingredients- 1/2 block firm tofu (approx. 150g)
- 2 button mushrooms (or 3 small button mushrooms)
- 1 egg
Cooking Instructions
Step 1
First, lightly rinse the tofu under running water. Then, gently pat it dry with paper towels to remove excess moisture. Removing moisture thoroughly is important to prevent the batter from becoming too watery.
Step 2
Mash the tofu using a fork or a mashing tool until it’s smooth and lump-free. Mashing it as finely as possible will make it easier for your baby to eat.
Step 3
Finely mince the prepared mushrooms. Two button mushrooms or three small ones should be sufficient. You can use other mushrooms with a similar texture, but those with light colors like enoki mushrooms might not be as visible when mixed with tofu. Using a food processor or chopper can make this step much quicker.
Step 4
Combine the mashed tofu and minced mushrooms in a bowl. Mix them thoroughly until well combined. Ensuring the tofu and mushrooms are evenly distributed is key.
Step 5
Now, crack in one egg and stir everything together again until all ingredients are uniformly mixed. The egg acts as a binder for the batter.
Step 6
Check the batter’s consistency. The thickness can vary slightly depending on the size of the egg. If the batter seems too wet, try cooking a small pancake first. If it falls apart easily, you can add a little more egg. If it’s too runny and resembles scrambled eggs, add a bit more tofu or mushroom to achieve the desired pancake consistency. Adjust the ingredients until you reach your preferred batter thickness.
Step 7
Add about one tablespoon of rice bran oil (or your preferred cooking oil) to a heated pan and let it preheat. Maintaining a medium-low heat is recommended.
Step 8
Use a spoon to scoop portions of the batter and place them onto the heated pan. Cook until golden brown on both sides. Avoid flipping too early. Wait until the edges of the pancake look slightly cooked and firm before carefully flipping it. This will help maintain its shape and ensure a clean flip.
