Soft Tofu Croquettes
No Flour, Yes Tofu! A Healthy & Delicious Diet Snack: Tofu Croquette Recipe
Introducing a special croquette made with soft tofu instead of the usual potatoes. Using tofu as the base makes the inside moist and mild. By omitting the flour coating and using only egg wash and breadcrumbs, these are a healthier diet snack option. The combination of a crispy exterior and a tender tofu filling is exquisite, and the addition of various vegetables makes these a wholesome croquette that is both tasty and nutritious. Although fried, they are cooked in a generous amount of oil rather than being fully submerged, making them enjoyable without being greasy. They taste even better dipped in ketchup! Main Ingredients- 1 block Tofu (approx. 300-350g)
- 1/4 Onion
- 1/4 Red Bell Pepper
- 3 stalks Garlic Scapes
- 3 Tbsp Sweet Corn
- 2 pieces Imitation Crab Meat (or Kanikama)
Cooking Instructions
Step 1
Wash all vegetables thoroughly. Finely mince the onion, red bell pepper, and garlic scapes. Mincing the vegetables finely helps them mix well with the tofu mixture and improves the texture.
Step 2
Remove as much water as possible from the tofu using a cheesecloth or paper towels. If the mashed tofu is too wet, the mixture will become too soft. Steaming the tofu beforehand can help remove more water.
Step 3
In a bowl, combine the mashed tofu with the minced onion, red bell pepper, garlic scapes, sweet corn, and shredded or chopped imitation crab meat. Season with a pinch of salt and pepper, then mix well until all ingredients are evenly incorporated to form the croquette mixture.
Step 4
Shape the mixture into croquettes of your desired size (bite-sized or larger). Dip each croquette evenly into the beaten eggs, then coat thoroughly with breadcrumbs. (The characteristic of this recipe is not using flour or pancake mix.)
Step 5
Heat a generous amount of oil in a wide frying pan over medium-low heat. Once the oil is sufficiently hot, carefully place the prepared tofu croquettes into the pan. Fry them until golden brown on all sides, turning as needed. You don’t need to fully submerge them; a generous amount of oil in the pan is enough to achieve a crispy texture.
Step 6
Once golden brown, transfer the cooked croquettes to paper towels to drain any excess oil. Thanks to the thin coating, they are not greasy even when eaten in larger quantities. Packed with tofu and vegetables, they make a healthy and light snack. Enjoy them with ketchup or your favorite dipping sauce for an even more delightful experience.
