Main Ingredients

  • Dried seaweed (cut) – 1 small packet (approx. 20g)
  • Soft Tofu – 2 packets (about 300-350g each)
  • Scallions – 2 stalks
  • Dried kelp – 5-6 small pieces
  • Anchovies for broth – 1 handful
  • Dried shrimp – 1 handful

Seasoning & Broth

  • Doenjang (Korean soybean paste) – 2 Tbsp
  • Water – 3 Liters
  • Black pepper – a pinch
  • Salt (to taste)

Cooking Instructions

Step 1

Soak the small packet of dried seaweed (about 20g) in lukewarm water for about 10 minutes until it rehydrates. While the seaweed is soaking, you can prepare the other ingredients to save time.

In a pot, combine 3 liters of water with anchovies, dried kelp, and dried shrimp. Bring to a rolling boil over high heat for 10 minutes to create a rich broth. Once the broth has developed its flavor, strain out all the solids, leaving a clear broth.

Trim the white parts of the scallions and finely chop the green parts. You can set aside some chopped scallions for garnish if you like.

Drain the rehydrated seaweed in a colander and gently rub it under running water to rinse off any grit or impurities. If the seaweed tastes too salty, you can soak it in cold water for a short while.

Dissolve 2 tablespoons of doenjang into the prepared broth. Stir well to ensure there are no clumps. Add the rinsed seaweed and simmer over medium heat for 10 minutes, allowing the seaweed’s flavor to infuse into the soup.

After simmering for 10 minutes, gently break the soft tofu into bite-sized pieces using a spoon and add it to the soup. Sprinkle in a pinch of black pepper to remove any fishy odors. Taste the soup and adjust the seasoning with salt if needed.
