Soft Tofu and Egg Soup
A mild and delicious tofu and egg soup, perfect for enjoying with children and adults who can’t eat spicy food. This simple and flavorful dish will have everyone reaching for a second bowl of rice.
Main Ingredients- 2 packs Soft Tofu
- Rice Water (enough to fill 2/3 of the pot)
- 1 sheet Dried Kelp
- 4 Eggs
- 1 stalk Green Onion
- 1 Tbsp Soy Sauce
- 1 Tbsp Salted Shrimp
Cooking Instructions
Step 1
First, prepare the rice water. When washing rice, discard the first water and use the water from the second wash onwards; this makes the soup richer and more flavorful. Fill about 2/3 of your pot with the prepared rice water.
Step 2
Begin heating the rice water. Once it starts to boil, add the sheet of dried kelp and simmer for about 5 minutes. The umami from the kelp will deepen the soup’s flavor. After 5 minutes, remove and discard the kelp.
Step 3
After removing the kelp, add 1 tablespoon of soy sauce to the rice water. Soy sauce adds a subtle color and a hint of savory depth to the broth. Using a tablespoon is convenient for measuring.
Step 4
Prepare the two packs of soft tofu. Cut each pack in half without breaking the tofu apart, and place the halves directly into the pot. There’s no need to chop it; it will gently break apart as it simmers, making it easier to eat.
Step 5
Crack the 4 eggs into a bowl and whisk them well. While the soup is actively boiling, find a boiling spot and slowly drizzle the whisked eggs into the pot. Pouring it in slowly this way will create beautiful, fluffy ribbons of egg rather than a solid omelet, enhancing both the appearance and texture.
Step 6
Once the soup comes to a rolling boil after adding the eggs, add the diagonally sliced green onion. The fresh aroma of the green onion will further enhance the soup’s taste.
Step 7
Finally, add 1 tablespoon of salted shrimp to season the soup. Salted shrimp is a secret ingredient that adds great umami and a rich flavor. After adding the salted shrimp, taste the soup and adjust the seasoning with more salted shrimp or a pinch of salt according to your preference. Your warm and delicious soft tofu and egg soup is now ready!
