Baby-Friendly Zucchini Delights: Stir-fried Zucchini & Zucchini Pancakes
When you need a nutritious side dish for your little one, make this gentle stir-fried zucchini and savory zucchini pancakes using two fresh zucchini. Their mild and plain flavors are perfect for babies.
Main Ingredients- 2 zucchinis
- A little dried anchovy for broth
- 1 sheet dried kelp for broth
- 1/2 Tbsp dried shrimp powder
- 1 egg yolk

Step 1
First, let’s prepare for the zucchini pancakes. Take about half of the two zucchinis, slice them thinly, and arrange them nicely on a plate. This will make for pretty shapes when frying.
Step 2
Now, we’ll make the stir-fried zucchini. Wash the remaining 1.5 zucchinis thoroughly, pat them dry, and then julienne them into fine strips about 0.5 cm thick. You can adjust the thickness of the strips to your preference.

Since this is for your baby, it’s important to minimize seasoning and bring out the natural flavors of the ingredients. First, add water to a pot and add the dried anchovies to boil for broth. Adding anchovies first can create a deeper flavor.
Step 4
Once the water is boiling vigorously, add the dried kelp and simmer for about 5 more minutes. Then, remove both the anchovies and kelp. To ensure your baby doesn’t taste any bitterness or fishiness, strain the prepared broth through a fine-mesh sieve for a clean finish.
Step 5
Heat a non-stick frying pan over medium-low heat without adding any oil. Add the julienned zucchini and stir-fry gently. When the zucchini becomes slightly translucent and tender, add about 2-3 tablespoons of the prepared anchovy-kelp broth and a tiny pinch of dried shrimp powder for extra flavor. Be careful not to overcook, as the zucchini can become too mushy.
Step 6
Transfer the warm stir-fried zucchini to a clean glass container or airtight food storage container and let it cool completely. Baby food should always be completely cooled before refrigerating for hygiene.
Step 7
While the stir-fried zucchini is cooling, it’s time to make the zucchini pancakes with the slices we prepared earlier. Lightly coat the sliced zucchini with egg yolk. Place the zucchini slices in a lightly oiled or non-stick pan and cook until golden brown on both sides. Enjoy your savory and delicious zucchini pancakes!
