First, wash the zucchini thoroughly. Cut it in half lengthwise, and then use a spoon to carefully scoop out and discard the seeds. Removing the seeds helps prevent the zucchini from releasing too much water during cooking, resulting in a tastier dish.

Julienne the zucchini into bite-sized strips, not too thin so they retain some texture. Place the julienned zucchini in a bowl and add 1 tablespoon of fermented salted shrimp. Let it sit for about 5 minutes; the zucchini will release some moisture, making it even more tender.
