Soft Stir-fried Bracken (Gosari Bokkeum) – Low Sodium
Healthy Low-Sodium Side Dish for Patients: Stir-fried Bracken
This is a delicious and healthy low-sodium braised bracken side dish, perfect for patients. To highlight the natural flavor of the bracken, we’ve used a reduced amount of soy sauce and seasoned it with fresh ingredients. Using domestic Korean bracken makes it exceptionally tender and rich in flavor. It’s a nutritious dish that works wonderfully as a main side for rice or as a packed lunch component.
Main Ingredients- 400g Boiled Korean Bracken (Gosari)
- 12g Green Onion (approx. 1/4 stalk)
- 38g Onion (approx. 1/4 medium)
- 1 Cheongyang Pepper (Korean hot pepper)
- 1 Red Cheongyang Pepper
- 2 Tbsp Olive Oil
Seasoning- 1 Tbsp Kelp Soy Sauce or Low-Sodium Regular Soy Sauce
- 1 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil
- A pinch of Toasted Sesame Seeds
- 1 Tbsp Kelp Soy Sauce or Low-Sodium Regular Soy Sauce

Cooking Instructions
Step 1
Check the tenderness of the bracken. If it feels tough, you can boil it for another 5-10 minutes to make it more tender before stir-frying.
Step 2
Thinly slice the onion. Finely chop the green onion. The sweetness of the onion and the aroma of the green onion will enhance the bracken’s flavor.
Step 3
Remove the seeds from the Cheongyang peppers and red Cheongyang peppers, then mince them finely. If you prefer more heat, you can adjust the quantity or include the seeds.
Step 4
Heat a wok or pan over medium heat and add 2 tablespoons of olive oil. Add 1 tablespoon of minced garlic, the sliced onion, and the chopped green onion.
Step 5
Sauté over medium-low heat for about 1-2 minutes until the onion becomes translucent and releases its sweet aroma. Be careful not to burn it.
Step 6
Add the prepared boiled bracken and stir-fry together. Mix well to allow the bracken to absorb the flavors of the seasoning and vegetables.
Step 7
If the bracken is still not tender at this point, add 1-2 tablespoons of water to the pan, cover with a lid, and steam for another 2-3 minutes. For easier eating, cut the bracken into bite-sized pieces, about 2-3 cm long.
Step 8
Add the minced Cheongyang peppers and red Cheongyang peppers and stir-fry briefly with the bracken. The spicy aroma of the peppers will awaken your appetite.
Step 9
Add 1 tablespoon of kelp soy sauce (or low-sodium regular soy sauce) and stir-fry until the flavors are well combined. Taste and adjust the seasoning as needed.
Step 10
Just before turning off the heat, stir in 1 tablespoon of sesame oil and a pinch of toasted sesame seeds. The nutty aroma of the sesame oil will further enhance the dish’s flavor.
Step 11
Transfer the perfectly stir-fried bracken to a serving dish. Enjoy this delicious side dish with a bowl of warm rice!
