Step 1
First, wash the spinach thoroughly. Bring water to a boil, add about half a tablespoon of salt, and blanch the spinach for just 10-15 seconds. It’s important not to overcook the spinach, as this can destroy its nutrients. As soon as it wilts slightly, immediately transfer it to cold running water to preserve its vibrant color.

If the blanched spinach is too long, chop it into bite-sized pieces, about 2-3 cm in length. This will help keep the egg roll neat and prevent it from falling apart when you roll it.
