Before you begin, please double-check that you have all the necessary ingredients ready. Pour 500ml of broth into a pot and bring it to a boil. Using anchovy-kelp broth will add a savory depth of flavor, making it even more delicious. Alternatively, rice water provides a milder, smoother taste.

While the broth is heating up, prepare the other ingredients. Crack the 2 eggs into a small bowl, whisk them gently to break the yolks and remove any stringy bits. Finely mince or thinly slice the shiitake mushroom cap after removing the tough stem. For your baby’s ease of eating, chop the white part of the green onion (or chives) into very fine pieces.
