Radish Namul Side Dish: How to Make It Soft and Not Fall Apart

Main Ingredients

  • 630g Korean radish (mu)
  • 250ml Anchovy-Kelp Broth (dashi stock)

Seasoning

  • 1 Tbsp Sesame Oil
  • 1 Tbsp Fish Sauce (or Tuna Extract)
  • A pinch of Toasted Sesame Seeds
  • 1 Tbsp Roasted Salt

Cooking Instructions

Step 1

Wash the fresh radish thoroughly. Slice it thinly to about 0.3cm thickness, then cut into julienne strips about 5-7cm long. Place the julienned radish in a large bowl.

Add 1 tablespoon of roasted salt to the julienned radish. Gently mix with your hands and let it sit for about 10 minutes. This process helps the radish release its moisture, prevents it from becoming mushy, and allows it to absorb flavor, making it tastier.

After 10 minutes, carefully drain out the water released from the radish. You can also drain it through a sieve for extra dryness. Then, place all the prepared radish into a preheated pan.

Add 1 tablespoon of fish sauce and a moderate amount of canola oil (or cooking oil) to the pan. Stir-fry over medium-low heat until the radish becomes translucent. (The fish sauce adds umami, and since we’ve already salted it, it’s best not to add more salt at this stage.)

Once the radish is slightly cooked, pour in the 250ml of anchovy-kelp broth. The broth will enrich the flavors of the dish.

Simmer the radish over medium-low heat until the broth is reduced and slightly soupy. Be careful not to overcook the radish, as we want to maintain a tender yet intact texture. Gentle simmering helps achieve this.

When the radish is almost cooked and the liquid has reduced, lower the heat to low. Add 1 tablespoon of sesame oil and a pinch of toasted sesame seeds.

Finally, gently stir the ingredients to ensure the seasoning is evenly distributed without breaking the radish pieces. Cook for another moment to allow the flavors to meld.

Transfer the delicious and tender radish namul to a serving dish. Your delightful radish side dish is now ready to be enjoyed!
