- 1 fresh egg

Step 1
First, prepare the two potatoes that will be the star of your delicious potato toast. Since this is a snack for children, it’s a good idea to peel them cleanly and rinse them under running water once more.

Finely julienne the prepared potatoes. If they are cut too thick, they will take longer to cook, so the tip is to slice them thinly into pieces that are easy for children to eat.

Now it’s time to cook the potatoes using the microwave. Place the julienned potatoes in a microwave-safe container and add just enough water to cover them slightly.

Slightly open the lid or cover with plastic wrap and microwave for 3 to 5 minutes. The cooking time may vary depending on the size of the potatoes and your microwave’s specifications, so it’s good to check halfway through. Use a fork to poke the potatoes and see if they are tender.

Be careful when removing the potatoes from the microwave as they will be hot. It’s important to drain the water from the potatoes as thoroughly as possible to achieve a good texture for the toast. Drain them in a colander or use paper towels to remove excess moisture.

Heat a frying pan over medium heat and add about 2 tablespoons of cooking oil. Gently swirl the pan to spread the oil evenly.

Place the drained potatoes onto the pan and shape them into flat, round toast shapes that are easy for children to hold and eat. You can make them look prettier by pressing down gently with the back of a spoon as you shape them.

Crack one fresh egg on top of the potato toast. Lightly break the egg yolk with a chopstick or fork so it flows down over the potatoes.

Sprinkle a tiny pinch of salt over the egg to season. Since this is a snack for children, it’s best to keep the seasoning light.
