  • 1 nectarine
  • 10g sugar
  • 20g peach iced tea drink

Topping Ingredients

  • 1 nectarine
  • A little olive oil
  • 1 tbsp sugar
  • 1 whole wheat cookie

Prepare your ingredients: Dice one nectarine for the jam and thinly slice another for the topping.

1. Make the tart crust: First, melt the 40g of butter in the microwave for about 20-25 seconds until completely liquid. Place the 80g of whole wheat cookies in a zip-top bag and crush them into fine crumbs.

Add the melted butter to the cookie crumbs in the zip-top bag. Seal the bag and shake or knead until the crumbs are evenly coated with butter.

Transfer the cookie mixture into your serving dish(es) or tart mold. Press down firmly and evenly with the back of a spoon to create a compact layer. Chill in the refrigerator for 15-20 minutes until the crust is firm.

2. Make the custard cream: Gently warm 90g of milk in the microwave for about 20-25 seconds. In a separate bowl, whisk 1 egg yolk until smooth. Add 20g of sugar and 10g of cornstarch to the yolk and mix well until no lumps remain.

Gradually whisk the warmed milk into the yolk mixture. Add the milk a little at a time to prevent the yolk from cooking. Mix thoroughly until well combined.
