Ingredients- 5 fresh eggs
- 100ml milk
- 100ml heavy cream
- 5-7cm green onion, finely chopped
- 1/2 onion, finely chopped
- 1/2 can Spam, diced
- 2 handfuls of mozzarella cheese
Cooking Instructions
Step 1
First, prepare the vegetables that will add flavor to the omelet. Finely chop the green onions and thinly slice the onion. Chopping them not too thick will ensure they cook tenderly.
Step 2
Dice the Spam into bite-sized pieces. Cubing it into small pieces makes it easier for children to eat.
Step 3
Carefully crack 5 fresh eggs into a bowl.
Step 4
Instead of whisking the eggs vigorously, gently beat them with a fork or whisk to avoid creating too much foam. Removing the chalazae (the white stringy bits) will result in an even smoother texture.
Step 5
Pour 100ml of milk for added softness and 100ml of heavy cream for richness into the beaten eggs. Gently stir again to combine all the ingredients well. This ratio makes the omelet extra moist and delicious.
Step 6
Lightly oil a heated pan and sauté the chopped green onions and sliced onions over medium-low heat until fragrant. Sautéing until the onions become translucent will bring out their natural sweetness.
Step 7
Once the onions start to turn translucent, add the diced Spam and sauté together. The salty flavor of the Spam combined with the sweetness of the vegetables creates a wonderfully rich taste.
Step 8
Push the sautéed vegetables and Spam to one side of the pan, then carefully pour the prepared egg mixture into the empty space.
Step 9
This is the crucial step! Reduce the heat to the lowest setting. Using chopsticks, gently scrape the bottom of the pan while moving the mixture back and forth diagonally. The key is to stir slowly to create a soft, curd-like texture without over-stirring. Tilting the pan slightly as it cooks will help form a beautiful shape.
Step 10
When the egg mixture is about 70-80% cooked and has a fluffy appearance, generously sprinkle mozzarella cheese over the top. Cover the pan with a lid and cook over the lowest heat possible until the cheese is melted and the entire omelet is fully cooked. The melting cheese will envelop the omelet, keeping it moist.
Step 11
(Optional) Make a sauce to accompany your omelet. Combine 6 tablespoons of tonkatsu sauce, 3 tablespoons of ketchup, 1 tablespoon of oyster sauce, 3 tablespoons of corn syrup, and 50ml of water in a saucepan and bring to a simmer. Add a little cornstarch slurry to thicken the sauce to your desired consistency. Pour this delicious sauce over your omelet and enjoy!
