Here’s a recipe for a soft and savory Japanese rolled omelet, loved by both kids and adults. It’s simple yet elegant, making it a perfect side dish for bento boxes or a delicious snack. 🍳 With just a few ingredients, you can create an exquisite flavor. Let’s get started!
Ingredients- 3 fresh eggs
- 0.5 Tbsp mentsuyu (Japanese soy sauce-based seasoning)
- 0.5 Tbsp mirin (sweet rice wine)
- 0.5 Tbsp sugar
- A pinch of salt for seasoning
- A little cooking oil for the pan
Cooking Instructions
Step 1
First, let’s prepare the ingredients for our delicious rolled omelet. Carefully crack 3 fresh eggs into a clean bowl. Tap, tap! Then, gently whisk the eggs with a fork or whisk until the yolks and whites are well combined. Be careful not to whisk too vigorously, as this can create too much foam.
Step 2
Add the mentsuyu to the beaten eggs to enhance the umami flavor. I added about 0.5 tablespoon, but you can adjust the amount based on the concentration of your mentsuyu. After adding the mentsuyu, gently stir again to ensure it’s evenly mixed with the egg mixture.
Step 3
For an even softer and more moist omelet, we recommend this step! Carefully pour the egg mixture through a fine-mesh sieve. Gently scrape the sieve with a fork or chopsticks to remove the chalazae (the stringy white bits). This will result in a much smoother texture. 😊
Step 4
To the sieved egg mixture, add 0.5 tablespoon of mirin for added flavor and 0.5 tablespoon of sugar for a subtle sweetness. Mix them well. Mirin helps to remove any eggy smell, and sugar makes the omelet even more tender.
Step 5
Finally, it’s time to season. Add a tiny pinch of salt, or you can also adjust the seasoning by adding a little more mentsuyu. When seasoning with mentsuyu and salt, it’s important to add them gradually and taste as you go to achieve the perfect balance. 🧂

Now, heat a non-stick pan over medium-low heat. Lightly grease the pan with cooking oil. Pour in just a small amount of the egg mixture, enough to create a thin layer. Once the bottom starts to set, carefully fold one-third of the omelet over itself and push it to one side of the pan. Then, pour another ladleful of egg mixture into the empty space to create a new thin layer. As it cooks, fold this layer over the previous one and push it to the side. Repeat this process, layering and folding, to build up a thick, beautiful rolled omelet.
Step 7
Carefully remove the finished rolled omelet from the pan and let it cool slightly. Once it has cooled a bit, slice it into your desired pieces. Your incredibly soft Japanese rolled omelet, which melts in your mouth, is now ready! 🥢 Here’s a tip: If you prefer it slightly less cooked, you can slice it and place it on top of sushi rice for a delightful tamagoyaki sushi experience. 😊
