Soft Homemade Egg Salad Sandwich

Easy Recipe for Baek Cafe-Style Egg Salad Sandwich (Egg Spread)

Today, I’m sharing a recipe using bread slices. This is a simple way to make an egg salad sandwich at home that’s similar to the ones sold at Baek Cafe, with a delicious egg spread flavor. It’s so soft and moist, you’ll find yourself reaching for it again and again. 🙂

Ingredients
  • 1 slice of bread
  • 2 eggs
  • 1 Tbsp vinegar
  • 0.3 Tbsp salt
  • 1 Tbsp mayonnaise
  • 1 Tbsp mustard
  • A pinch of pepper
  • Butter, as needed
  • 2 slices of pickled cucumber

Cooking Instructions

Step 1

Fill a pot with enough water to cover the eggs. Once the water boils, add a pinch of coarse salt and 1 tablespoon of vinegar. Then, add the 2 eggs. Boiling for about 10 minutes will result in hard-boiled eggs, but I prefer them slightly softer, so I took them out after about 8 minutes. After boiling, place the eggs in cold water to cool them down before peeling. This makes peeling much easier.

Step 2

You can separate the egg whites and yolks if you prefer, but I found it easier to just put everything in a bowl and mash it with a spoon. I personally like having some texture, so I don’t mash it too finely.

Step 3

Mash the boiled eggs thoroughly. Then, add 1 tablespoon of mayonnaise, 1 tablespoon of honey mustard, and a pinch of salt and pepper. For a bit of tanginess, I also finely chopped 2 slices of pickled cucumber and mixed them in. (Recipe for pickled cucumbers available at @6965548)

Step 4

Now that the filling is ready, let’s toast the bread. Melt a generous amount of butter in a heated pan and place the bread slices on it. Toast both sides until golden brown and crispy.

Step 5

I only had one slice of bread left, so I used just that. Using milk bread would have been even softer and nicer, but since I had bread slices, I used those. It’s always best to cook with ingredients you have on hand! Cut the toast into bite-sized pieces and generously top with the egg salad.

Step 6

Your egg spread (egg salad sandwich) is complete! The addition of pickled cucumber adds a delightful tanginess and a great texture. It’s convenient because you don’t need to adjust the seasoning separately. This is perfect as a snack with drinks or for kids.
