Main Ingredients
  • 3 large eggs
  • 10 cherry tomatoes
  • 2 sausages
  • 1/2 stalk green onion
  • 0.5 Tbsp oyster sauce

  • 20g butter
  • 2 Tbsp olive oil
  • 2 pinches salt
  • Pinch of black pepper

Cooking Instructions

Step 1

First, remove the stems from the cherry tomatoes and wash them thoroughly under running water. For extra peace of mind, soak them in water with a few drops of vinegar for about 5 minutes. After draining them completely, prepare the tomatoes along with 2 sausages.

Step 2

Halve the cherry tomatoes and dice the sausages into bite-sized pieces, similar in size to the tomatoes. Finely chop the green onion; this will add a wonderful aroma to the dish.

Step 3

Melt 20g of butter in a pan over medium heat. Pour in the beaten eggs and gently stir with chopsticks or a spatula until about 80% cooked, creating scrambled eggs. (Tip: Adding 2 Tbsp of milk at this stage will make the eggs even softer. However, even without milk, the butter will ensure a tender and delicious result.)

Step 4

Transfer the partially cooked scrambled eggs to a separate bowl. Add 2 Tbsp of olive oil to the same pan and sauté the chopped green onions over medium-low heat until fragrant, creating ‘green onion oil.’ Once the green onions are golden and aromatic, add the halved cherry tomatoes and stir-fry until they begin to soften.

Step 5

As the tomatoes start to cook down, return the scrambled eggs to the pan and mix well. Stir in 0.5 Tbsp of oyster sauce for added umami (don’t forget this, even though it’s not pictured!). Season with a pinch of salt and a dash of black pepper to taste. Your delicious Tomato and Egg Stir-fry is almost ready!

Step 6

Finally, add another pinch of salt and a little more pepper to balance the flavors perfectly. This simple yet impressive dish is now complete! It’s fantastic as a brunch option or as a flavorful side dish.
