  • 1 Cucumber
  • 5 Tbsp Canned Corn Kernels

Dressing Ingredients
  • 3 Tbsp Mayonnaise
  • 1 Tbsp Mustard Sauce
  • 1/2 tsp Black Pepper
  • 1 tsp Salt

Cooking Instructions

Step 1

First, wash the cucumber thoroughly and thinly slice it on an angle. For the peel, use a vegetable peeler to create a zigzag pattern, leaving some of the skin on for a better texture. Place the 5 eggs in a pot and boil for about 30 minutes until hard-boiled. Using the ‘Quick’ setting on an electric rice cooker usually takes around 20 minutes.

Step 2

Add 1 tsp of coarse salt to the sliced cucumber and let it sit for at least 10 minutes to salt. While it’s salting, gently rinse the cucumber with fresh water and then squeeze out any excess moisture by hand. This step helps to maintain its crispness.

Step 3

Once the eggs are cooked, peel them. Place the peeled eggs in a bowl and mash them thoroughly with a fork or a masher until smooth and no large lumps remain. If you used the ‘Keep Warm’ function on your rice cooker, mashing while the eggs are still warm will make it easier.

Step 4

To the mashed eggs, add 3 Tbsp of mayonnaise, 1 Tbsp of mustard sauce, and a pinch of black pepper to your liking. Mix well. Then, add the drained cucumber and the drained canned corn kernels, and gently combine everything.

Step 5

Finally, sprinkle a little dried parsley on top for a visually appealing and delicious egg salad. Serve in a pretty bowl or container and enjoy! I personally highly recommend serving it in between soft buns for a delightful sandwich!
