Ingredients (Makes approx. 16 cookies)
  • 115g unsalted butter, softened to room temperature
  • 60g dark brown sugar
  • 70g granulated sugar
  • 1 large egg, room temperature (approx. 53g)
  • 3g vanilla extract
  • 165g all-purpose flour
  • 3g baking soda
  • 1.5g salt
  • 70g white chocolate chips (adjust to your preference)
  • 70g dried cranberries (soaked in rum or plain, adjust to your preference)

Cooking Instructions

Step 1

In a large bowl, cream together the softened unsalted butter with both the dark brown sugar and granulated sugar until light and fluffy. This step is crucial for achieving a tender cookie texture and incorporating air. Beat until the mixture is well combined and has a creamy consistency.

Step 2

Add the room temperature egg and vanilla extract to the butter-sugar mixture. Beat well until everything is thoroughly combined and no streaks of egg remain. Ensure the mixture is smooth and emulsified.

Step 3

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Sift these dry ingredients over the wet ingredients. Gently mix with a spatula or wooden spoon until just combined and no dry flour is visible. Be careful not to overmix, as this can lead to tough cookies.

Step 4

Fold in the white chocolate chips and dried cranberries. If using rum-soaked cranberries, drain them before adding. Gently mix them into the dough until they are evenly distributed. Avoid overmixing at this stage as well.

Step 5

Line baking sheets with parchment paper or silicone baking mats. Drop rounded tablespoons of cookie dough onto the prepared baking sheets, ensuring they are spaced well apart (about 2 inches) as the cookies will spread during baking.

Step 6

Bake in a preheated oven at 170°C (340°F) for 10-12 minutes, or until the edges are lightly golden brown and the centers are still slightly soft. Baking times can vary depending on your oven, so keep an eye on them.

Step 7

Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy these delightful cookies with a glass of milk or your favorite beverage!
