A super simple kid’s side dish made by quickly stir-frying crab sticks nearing their expiry date with soft eggs. The eggs are cooked to a tender consistency, making them perfect for children, and the mild yet flavorful dish is an excellent accompaniment to rice. In a bowl, crack 3 fresh eggs. Whisk them thoroughly with a fork or whisk until the yolks and whites are well combined, creating a smooth egg mixture. Adding a pinch of salt at this stage helps to enhance the flavor and mask any eggy smell.

Carefully unwrap the crab sticks. Shred them lengthwise according to their natural grain into bite-sized pieces. You can shred them into larger pieces or smaller ones depending on your child’s preference. Add the shredded crab sticks to the prepared egg mixture.

Gently mix the crab sticks and egg mixture together. Be sure to loosen any clumps of crab meat as you mix so that the ingredients are evenly distributed for a harmonious flavor.

Heat 1 to 2 tablespoons of cooking oil in a frying pan over medium-low heat. Once the pan is adequately heated, carefully pour in the crab stick and egg mixture. Cooking slowly over low heat is the key to achieving a tender texture.

As the edges of the egg mixture begin to set, use chopsticks or a spatula to gently stir and scramble the eggs. Avoid cooking over high heat, as this can make the eggs tough. Stir gently over low heat to create soft curds.

When about 80% of the egg mixture is cooked and still looks moist, turn off the heat immediately. The residual heat from the pan will finish cooking the eggs, preventing them from becoming dry and rubbery. Transfer the finished crab stick and egg scramble to a nice plate and enjoy it while warm.
