Healthy Homemade Cabbage Egg Yolk Cookies Recipe
Don’t let those leftover egg yolks from making coconut macaroons go to waste! This recipe introduces you to ‘Cabbage Cookies,’ which are soft and subtly flavored without any butter. It uses the same basic recipe as the previously shared blueberry cookies, ensuring a healthy treat with no additives. These cookies are safe for adults, children, and even pets (dogs and cats), making them a wonderful snack to share with the whole family.
Cookie Ingredients
- 4 fresh egg yolks
- 120g fine rice flour
- 20g cabbage powder (finely ground dried cabbage)
- 50g honey
Cooking Instructions
Step 1
In a bowl, gently whisk the 4 fresh egg yolks until smooth and lump-free. This crucial step helps reduce any eggy smell and ensures the batter mixes evenly.
Step 2
Add the 50g of honey to the bowl with the whisked egg yolks. Stir well with a whisk until the honey and yolks are completely combined. Mix gently to prevent the honey from clumping.
Step 3
In a separate bowl, combine the 120g of fine rice flour and 20g of cabbage powder. Sift them together through a sieve two to three times. This process removes any lumps and incorporates air, contributing to a softer cookie texture.
Step 4
Add the sifted dry ingredients to the bowl containing the egg yolk and honey mixture. Using a spatula, gently fold the ingredients together using a ‘cutting’ motion. Avoid overmixing, as this can make the cookies tough; mix just until no dry flour streaks are visible.
Step 5
Spoon the finished batter into a piping bag. Pipe your desired shapes onto a baking sheet. You can get creative with the shapes, similar to the bone shape shown previously, to make them more appealing to children. Ensure the cookies are piped in uniform sizes for even baking.

If the batter is too thick to pipe easily, you can adjust the consistency by adding a very small amount of water (about 1 teaspoon) depending on the honey’s thickness. In colder weather, honey can solidify; warming it gently in a double boiler can make it more pliable. Be cautious not to add too much water, as it can make the batter too runny.
Step 7
Place the baking sheet with the piped cookies into an oven preheated to 180°C (350°F) and bake for about 15 minutes. Keep an eye on the cookies and adjust the baking time as needed. They are done when the tops are lightly golden brown.
Step 8
Once removed from the oven, carefully transfer the cookies from the baking sheet to a wire rack to cool completely. They are delicate when warm, so handle them gently to prevent breakage.
