Main Ingredients
  • 3 slices of bread (cut into bite-sized cubes)
  • 2 tablespoons dried cranberries (for a sweet and tangy flavor and texture)
  • 1 ripe banana (mashed or sliced)
  • A pinch of powdered sugar (for garnish)

Sweet Custard Mixture Ingredients
  • 1 paper cup of banana milk (approx. 200ml, for a moist pudding)
  • 1/2 tablespoon sugar (adjust to your preference)
  • 1 fresh egg
  • A pinch of cinnamon powder (for a fragrant aroma)
  • A pinch of salt (to enhance sweetness)

Cooking Instructions

Step 1

First, cut the bread slices into bite-sized cubes, about 2cm in size. Peel and slice the banana into similar-sized pieces. This ensures the ingredients cook evenly within the pudding.

Step 2

Now, let’s make the sweet and fragrant custard. In a bowl, crack 1 fresh egg, add 1/2 tablespoon of sugar and a pinch of salt, and whisk until smooth. Once the egg is well combined, add 1 paper cup (approx. 200ml) of banana milk and a pinch of cinnamon powder. Whisk everything together until there are no lumps. Using banana milk will infuse the entire pudding with a subtle banana flavor, making it even more delicious.

Step 3

Arrange the cubed bread, sliced banana, and dried cranberries evenly in an oven-safe dish or ramekin. Pour the prepared custard mixture over them, ensuring all ingredients are well coated. Let it sit for about 5-10 minutes to allow the bread and fruit to soak up the custard. This step is crucial for a moist and tender pudding.

Step 4

Preheat your oven to 180°C (350°F). Place the dish with the soaked bread and fruits into the preheated oven and bake for 20-25 minutes. The pudding is ready when the top is golden brown and the center is set with a slight wobble. Baking time may vary depending on your oven.

Step 5

Once baked, carefully remove the banana bread pudding from the oven and let it cool slightly. Then, dust the top generously with powdered sugar using a sieve. The powdered sugar, like a dusting of snow, will enhance both the flavor and the visual appeal of your sweet pudding. It’s delicious served warm or chilled!
