  • 200g cooked sweet potato, mashed
  • 4 Tbsp maple syrup
  • 2 Tbsp grapeseed oil (or other neutral vegetable oil)

Cooking Instructions

Step 1

Start by preparing your cooked sweet potato. You’ll need 200g, which is roughly one medium-sized sweet potato. After cooking the sweet potato until tender, peel it while it’s still warm. Use a fork or a potato masher to mash it very smoothly, ensuring there are no lumps. Smooth mashing is key for a pleasant cookie texture.

Step 2

To the mashed sweet potato, add 4 tablespoons of maple syrup for a natural sweetness. You can adjust the amount of maple syrup slightly based on your preference or for the children’s taste. Next, add 2 tablespoons of grapeseed oil (or another neutral vegetable oil) which will contribute to the cookie’s soft texture. Mix everything together thoroughly with a spatula or spoon until well combined. The mixture should resemble a smooth, creamy sweet potato puree.

Step 3

Now it’s time to shape the cookie dough. Transfer the mixture into a piping bag fitted with your desired tip (such as a star or round tip). Fill the piping bag completely with the sweet potato dough. Since the dough is not too thin, it should be easy to pipe. Pipe the dough onto a baking sheet lined with parchment paper or a silicone mat, leaving some space between each cookie. You can pipe them in swirls, rounds, or any shape you like!

Step 4

Finally, preheat your oven to 180°C (350°F). Place the piped sweet potato cookies into the preheated oven and bake for about 10 minutes, or until lightly golden brown. Keep an eye on them to prevent burning. Once baked, remove the cookies from the oven and let them cool completely on a wire rack. They are delicious warm, but they achieve an even better crisp texture as they cool.
