Soft and Sweet Pumpkin Porridge
Easy Pumpkin Porridge Made with a Rice Cooker
When your stomach is upset or you’re feeling low on energy, try making this easy and comforting pumpkin porridge in your rice cooker. Its smooth texture and gentle sweetness will soothe your stomach and provide essential nutrients, making it a perfect nourishing meal.
Main Ingredients- 1 whole pumpkin (approx. 1kg)
- 1 bowl of cooked glutinous rice (leftover rice)
- 2 Tbsp glutinous rice flour
- 1 liter water
Cooking Instructions
Step 1
First, wash the pumpkin thoroughly. Then, microwave it for about 5 minutes. This will slightly soften the pumpkin, making it much easier to cut. This is a great tip to prepare it for peeling!
Step 2
Carefully cut the hot pumpkin in half after removing it from the microwave. Use a sharp spoon to scoop out and discard all the seeds and stringy bits from the inside.
Step 3
After removing the seeds, carefully peel the thick skin off the pumpkin using a vegetable peeler or a knife. Cut the peeled pumpkin into four equal pieces.
Step 4
Now, place the quartered pumpkin pieces into your rice cooker. Add 1 bowl of cooked glutinous rice (leftover rice) and 2 tablespoons of glutinous rice flour. Pour in 1 liter of water until the ingredients are covered.
Step 5
Close the rice cooker lid and select the ‘Porridge’ or ‘Nutritious Porridge’ setting. If your rice cooker has different functions, use the one designated for cooking porridge.
Step 6
Once the cooking cycle is complete, open the lid and check if the pumpkin is cooked through. If it’s still a bit firm, close the lid and use the ‘Porridge’ or ‘Reheat’ function for another 10-20 minutes. You can repeat this step a couple more times until it’s very soft.
Step 7
Your delicious pumpkin porridge, made in about an hour, is now ready! Use a spatula to mash the pumpkin and mix everything together thoroughly. This step ensures a smooth and consistent texture for your porridge.
Step 8
Finally, add 3 tablespoons of sugar and 1 teaspoon of salt to taste. You can adjust the amount of sugar based on the sweetness of your pumpkin and your personal preference. Stir everything well to combine, and your pumpkin porridge is complete!
