Soft and Spicy Stir-fried Dried Shredded Squid
Tender and Delicious Stir-fried Dried Shredded Squid with a Spicy-Sweet Kick
When my child was younger, they couldn’t eat dried squid snacks well, but they absolutely loved this stir-fried version made with shredded squid! It brought back old memories, so I decided to make it again after a long time. It’s spicy, sweet, and incredibly tender, perfectly suited for children’s palates! This dish is not only a delightful side for rice but also a great snack.
Main Ingredients- 100g Fine dried shredded squid
- 1 Tbsp Cooking sake (like Mirin)
- 1 Tbsp Scallion (finely chopped)
Seasoning- 1 Tbsp Chili oil
- 2 Tbsp Grapeseed oil (or vegetable oil)
- 1 Tbsp Minced garlic
- 1 Tbsp Sugar
- 1 Tbsp Corn syrup (or rice syrup)

Cooking Instructions
Step 1
First, cut the fine dried shredded squid into bite-sized pieces, about 5cm long. If they are too long, they can be difficult to eat, so cutting them to suit a child’s mouth size is recommended.
Step 2
In a dry, unheated pan, add the shredded squid and 1 Tbsp of cooking sake. Stir-fry over low heat for about 1-2 minutes to eliminate any fishy odor. Transfer the squid to a separate bowl and let it cool slightly.
Step 3
Now, let’s prepare the seasoning. You can use the same pan or a clean one. Add 1 Tbsp chili oil, 2 Tbsp grapeseed oil, 1 Tbsp minced garlic, 1 Tbsp sugar, and 1 Tbsp corn syrup to the pan. Bring it to a simmer over medium heat. Once the seasoning boils, add the finely chopped scallions and continue to simmer for another 30 seconds to 1 minute to infuse the aroma.
Step 4
Once the seasoning is bubbling nicely, reduce the heat to very low. Carefully add the pre-stir-fried shredded squid to the pan. Gently toss the squid, ensuring it’s coated with the seasoning without burning. Stir-fry for just 1-2 minutes until the squid is well-coated. Finally, sprinkle with sesame seeds for a garnish and a delicious finish.
