  • 1 handful of blanched radish greens

Seasoning Ingredients

  • 1 Tbsp store-bought doenjang (Korean soybean paste)
  • 1 tsp minced garlic
  • 1 tsp maesilcheong (plum extract)
  • 1 Tbsp sesame oil
  • 2 Tbsp perilla powder (generously heaped)

Cooking Instructions

First, prepare one handful of blanched radish greens. Gently squeeze out excess water without wringing too tightly; over-squeezing can make the greens tough.

Cut the drained radish greens into bite-sized pieces, approximately 7cm long. Cutting them slightly longer than for soup makes for a better texture in a seasoned dish.

In a mixing bowl, add the seasoning ingredients. Spread 1 tablespoon of doenjang evenly, then add 1 teaspoon of maesilcheong, 1 teaspoon of minced garlic, 1 tablespoon of sesame oil, and a generous 2 tablespoons of perilla powder.

Gently mix the seasoning ingredients together with your hands. Once evenly combined, add the blanched radish greens and toss gently to coat everything.

Season the radish greens by using the tips of your fingers to gently mix and rub the seasoning in. This helps the flavors penetrate the greens without crushing them.

A little bit of moisture at the bottom of the bowl will make the seasoned radish greens feel moist and tender. Taste and adjust seasoning if needed by adding a little more doenjang, but aim for a subtle savory flavor rather than a strong salty taste.
