Rice bread is softer and easier to digest than wheat bread due to the absence of gluten. The Cuckoo bread maker simplifies the entire process, from kneading and proofing to baking, making it effortless for beginners to create delicious milk rice bread. Enjoy the warmth and subtle milky aroma of freshly baked bread!

Ingredients for Milk Rice Bread

  • 100g Water
  • 80g Milk
  • 30g Butter (at room temperature)
  • 300g Strong Rice Flour
  • 30g Mascobado Sugar
  • 5g Salt
  • 3g Dry Yeast

Cooking Instructions

Insert the kneading paddle securely into the Cuckoo bread maker.

For this recipe, we’re using a mixture of 100g of water and 80g of milk. This combination will result in a moister and softer texture compared to using only 180g of water as done previously.

Add the liquid ingredients (water and milk) to the bread maker first, followed by the 300g of strong rice flour. It’s best to add the flour last.

On the edges of the rice flour, place the 5g of salt and 30g of Mascobado sugar separately. Then, create a small well in the rice flour and carefully add the 3g of dry yeast into it. Cover the yeast gently with a bit of the rice flour so it doesn’t directly touch the salt or sugar. Finally, add the 30g of butter, which has been softened at room temperature. Once all ingredients are in the bread maker, close the lid and press the start button to begin the kneading cycle.

While the Cuckoo bread maker is diligently kneading, if you experience wrist pain or find the kneading process tedious, this bread maker is a perfect solution! With just a button press, it handles kneading, the first proofing, and baking automatically, making it incredibly convenient. Even though I have an oven, I now primarily use my Cuckoo bread maker for baking bread. When the bread is done, an alert sound will notify you. A 1-hour warming function will automatically start afterward. If you don’t need the warming function, you can simply press ‘Stop Warming’ and remove the bread.

The moment of taking the bread out of the bread maker after baking is always exciting. Our milk rice bread has taken on a unique shape, somewhat like a rugby ball or a traditional Korean ‘meju’ (fermented soybean block)! You can see that the crust is beautifully golden brown on both the front and back. Although this is my first time making milk rice bread with the Cuckoo bread maker, the result looks very promising!

Cutting the finished bread in half and looking inside reveals an incredibly soft and moist texture, reminiscent of chicken breast! The characteristic softness of rice flour is truly evident.

Freshly baked bread is delicious on its own, but spreading some sweet strawberry jam on it elevates it to a truly delightful experience! The combination of warm bread and tangy strawberry jam is simply superb!
