Main Ingredients- Dried shredded squid 200g
- Mayonnaise 2~3 Tbsp
Seasoning Ingredients- Gochujang (Korean chili paste) 3 Tbsp
- Gochugaru (Korean chili flakes) 2 Tbsp
- Fish sauce (or anchovy sauce) 1 Tbsp
- Cooking wine (Mirin, etc.) 2 Tbsp
- Oligosaccharide or corn syrup 1.5 Tbsp (plus an additional 1 Tbsp at the end)
- Sugar 0.5 Tbsp
- Cooking oil 1 Tbsp
- Toasted sesame seeds 1 Tbsp
- Sesame oil 1 Tbsp
- Gochujang (Korean chili paste) 3 Tbsp
- Gochugaru (Korean chili flakes) 2 Tbsp
- Fish sauce (or anchovy sauce) 1 Tbsp
- Cooking wine (Mirin, etc.) 2 Tbsp
- Oligosaccharide or corn syrup 1.5 Tbsp (plus an additional 1 Tbsp at the end)

Cooking Instructions
Step 1
Cut the dried shredded squid into bite-sized pieces, about 5-7 cm long. If the squid strips are thick, tear them lengthwise in half to help the seasoning penetrate better and improve the texture. Since the squid may be dry from storage, lightly rinse it under cold water and drain well. Be careful not to rinse for too long, as this can affect the flavor.
Step 2
After draining the water, squeeze out any excess moisture from the dried shredded squid with your hands. Then, add 2-3 tablespoons of mayonnaise and gently knead it into the squid. Let it marinate for about 10 minutes. This step is crucial for making the squid incredibly soft and ensuring it absorbs the flavors well.
Step 3
While the squid is marinating, let’s prepare the delicious sauce. In a pan over low to medium heat (do not turn on the heat yet), combine Gochujang (3 Tbsp), Gochugaru (2 Tbsp), fish sauce (1 Tbsp), cooking wine (2 Tbsp), sugar (0.5 Tbsp), and oligosaccharide (or corn syrup) (1.5 Tbsp). Add 1 tablespoon of cooking oil to the pan. Stir everything together and cook over medium-low heat, stirring constantly, until the mixture bubbles and thickens slightly. Avoid cooking over high heat, as the sauce can burn. If the sauce seems too thick, you can add 2-3 tablespoons of water to adjust the consistency.
Step 4
Once the sauce starts to bubble, reduce the heat to the lowest setting or turn it off completely. Now, add the mayonnaise-marinated dried shredded squid to the pan. Using two spatulas or wearing disposable gloves, gently mix and coat the squid evenly with the sauce. Ensure that the sauce is distributed without clumping, covering each strand of squid.
Step 5
Finally, add the remaining 1 tablespoon of oligosaccharide (or corn syrup) to give it a nice sheen. Drizzle in 1 tablespoon of sesame oil and sprinkle with 1 tablespoon of toasted sesame seeds.
