Main Ingredients- Seoritae (Black Soybeans) 500g
Seasoning Ingredients- Water 1.5L
- Soy Sauce 200ml
- Oligosaccharide 150ml
- Sugar 3-4 Tbsp
- Grapeseed Oil 3-4 Tbsp (Vegetable oil or Olive oil can be substituted)
- Sesame Seeds, a pinch

Cooking Instructions
Step 1
Start by selecting fresh Seoritae (black soybeans) for the best flavor and texture.
Step 2
Rinse the 500g of Seoritae thoroughly under running water. After washing, soak the beans in fresh water for about 30 minutes. This soaking step is crucial for achieving a tender texture when cooked.
Step 3
Drain the soaked Seoritae completely using a colander. Ensuring the beans are well-drained will help the seasoning adhere better during cooking.
Step 4
In a pot, add 1.5L of water and the soaked Seoritae. Bring to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer until the water has reduced by about half. Do not discard the cooking water; it will be used in the seasoning process.

When the water has reduced by half, add 200ml of soy sauce. This will impart a rich flavor and color to the soybeans.
Step 6
Add 150ml of oligosaccharide (a type of syrup) for sweetness and a glossy finish. Stir well to combine with the soy sauce.

Add 3-4 tablespoons of sugar, adjusting to your preferred level of sweetness. Feel free to add more or less to suit your taste.

For a beautiful shine and nutty aroma, add 3-4 tablespoons of grapeseed oil. You can also use vegetable oil or olive oil. This step is a secret to achieving that irresistible glossy appearance.

Simmer over high heat for about 10 minutes, then reduce the heat to low and let it simmer gently for 20-25 minutes, stirring frequently to prevent sticking. Frequent stirring is key to ensuring even cooking and preventing the beans from burning. Patiently simmering will result in perfectly delicious Kongjaban.
