You can make a simple and delicious stew with just zucchini and shrimp paste! The coolness of the shrimp paste and the sweetness of the zucchini are a perfect match. It’s incredibly soft and tasty ^^. Its melt-in-your-mouth texture makes it perfect for babies and the elderly. *(When making this for children or seniors, omit the chili peppers or hot peppers.)*
Ingredients
- 1 medium zucchini
- 1 onion
- 1 red chili or hot pepper (optional)

- 1 Tbsp salted shrimp (adjust to taste)
- 1 bowl anchovy-kelp broth (about 200ml)
- 1 Tbsp minced garlic
- 2 Tbsp perilla powder
- 2 Tbsp perilla oil

Cooking Instructions
Step 1
Wash the zucchini thoroughly and slice it into bite-sized pieces (about 0.7cm thick). Slicing it too thin might cause it to break apart while cooking, so aim for a moderate thickness.
Step 2
In a pot, add 1 bowl of anchovy-kelp broth (or rice water). Stir in 1 Tbsp of salted shrimp. Salted shrimp is key to the broth’s flavor, so it’s recommended to start with 1 Tbsp and adjust later if needed. Add 1 Tbsp of minced garlic and 2 Tbsp of perilla powder. Bring to a boil over high heat. Once boiling, add the sliced zucchini.
Step 3
After the zucchini starts boiling, reduce the heat to low. Let it simmer gently until the zucchini becomes completely tender and the broth absorbs its sweetness. This process allows the zucchini to cook down and deepen the flavor of the soup. Simmer for about 5-7 minutes.
Step 4
Once the zucchini is soft and fully cooked, add the sliced onion and the optional red chili (or hot pepper). Let it simmer for another minute or two until the onion is slightly softened. Finally, drizzle in 2 Tbsp of perilla oil for aroma and simmer for another 1-2 minutes until the onion is lightly cooked. Your delicious shrimp paste and zucchini stew is ready! Taste and adjust seasoning with more salted shrimp if necessary.
