Main Ingredients- 1 ripe tomato
- 1/2 bunch of wild chives, cleaned (approx. 50g)
- 1/6 onion (small size)
Batter & Seasoning- 5 Tbsp all-purpose flour (or pancake mix)

- 1/2 tsp salt

Cooking Instructions
Step 1
First, wash the tomato thoroughly, remove the stem, and dice it into small, bite-sized pieces, about 0.5 cm in size. Cutting them too large might increase cooking time.

Step 2
Rinse the wild chives under running water to remove any dirt or debris. Shake off excess water and finely chop them into approximately 1 cm lengths. If chopped too short, they might break apart during cooking, so aim for a moderate length.

Step 3
Peel the onion and either slice it thinly or mince it very finely. The sweetness of the onion will enhance the flavor of the pancake.

Step 4
In a bowl, combine the diced tomato, chopped wild chives, and prepared onion. Add the 5 tablespoons of all-purpose flour and gently mix so the flour evenly coats the ingredients.

Step 5
Next, crack in the 2 fresh eggs and add the 1/2 teaspoon of salt. Whisk everything together with a whisk or chopsticks until well combined to form the batter. Don’t overmix; it’s perfectly fine.

Step 6
Heat a pan over medium heat and add a generous amount of cooking oil. Spoon the batter into the pan, about one ladleful at a time. Cook for about 2-3 minutes until the underside is golden brown and lightly crisp. When the edges start to look cooked, carefully flip the pancake and cook the other side until it’s also golden brown. Using plenty of oil will ensure a crispy and delicious pancake.
