Introducing my all-time favorite side dish that brings back childhood memories: Stir-Fried Dried Shredded Squids! Its spicy and sweet flavor captivates everyone, from children to adults. If you follow this recipe, you’ll enjoy stir-fried dried shredded squids that remain soft, just like they were when freshly made, even the next day. It’s a perfect side dish to make you eat more rice!

Seasoning Ingredients

  • 2 Tbsp Mirin (rice wine)
  • 1 Tbsp cooking oil
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1.5 Tbsp soy sauce
  • 1.5 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Oligodang (corn syrup) (or Allulose)
  • 0.5 Tbsp sugar
  • 3 Tbsp water
  • 1 Tbsp mayonnaise
  • 1 Tbsp sesame seeds

Cooking Instructions

Step 1

First, prepare 250g of dried shredded squids. For easier eating and better seasoning absorption, cut them into bite-sized pieces of about 2-3 cm using scissors or a knife.

To remove any unpleasant smell and make the squids tender, we’ll rinse them under clean water. Place the dried shredded squids in a bowl and gently rub them with your hands while rinsing. Be careful not to soak them in water for too long, as this can wash away their delicious flavor. It’s important to drain the water immediately after rinsing.

Squeeze out the excess water from the rinsed squids firmly with both hands and place them in a bowl. Add 2 tablespoons of Mirin (rice wine) and 0.5 tablespoon of sugar. Gently mix them together with your hands. This step helps to tenderize the squids and remove any gamey odors.

Now, let’s make the delicious seasoning! Heat a frying pan over low heat. Add 1 tablespoon of cooking oil and 1 tablespoon of Gochugaru (Korean chili flakes). Stir-fry them slowly to create chili oil. The key is to stir-fry over low heat to prevent burning.

Once the chili oil is made, immediately add 1.5 tablespoons of Gochujang (Korean chili paste) and 1.5 tablespoons of soy sauce. Stir-fry briefly over low heat. Be cautious, as the seasoning can burn if cooked for too long.

To prevent the seasoning from burning and to adjust its consistency, quickly add 3 tablespoons of water. Stirring quickly will make the sauce much smoother.

Now, increase the heat to medium and let the seasoning sauce simmer slightly until it bubbles. Let it simmer for a moment to allow the flavors to meld together.

As soon as the seasoning sauce starts to bubble, turn off the heat immediately. While the pan is still hot, add the pre-seasoned dried shredded squids and mix them well so the sauce coats them evenly. Stir-frying with residual heat will prevent the squids from burning and allow the sauce to penetrate nicely.

Add 1 tablespoon of mayonnaise for extra softness and 1 tablespoon of Oligodang (or Allulose, which can be used as a sugar substitute) to adjust the sweetness. Mix everything thoroughly again. Mayonnaise is the secret ingredient to making the dried shredded squids extra moist and tender.

Finally, sprinkle 1 tablespoon of sesame seeds for a nutty aroma to finish. Adding sesame seeds makes the dish visually appealing and enhances the overall flavor.
