  • 390g prepared bellflower root (doraji)
  • 1 Tbsp coarse salt (for removing bitterness)

Seasoning Ingredients

  • 1 Tbsp tuna extract
  • Pinch of roasted salt (to adjust seasoning)
  • 150ml kelp broth or anchovy-kelp broth
  • 1 Tbsp sesame oil
  • Pinch of sesame seeds (for added nutty flavor)

Cooking Instructions

Step 1

Place the prepared bellflower root in a bowl. Add 1 tablespoon of coarse salt to begin the process of removing its bitterness.

Add a little water to cover the bellflower root. Then, knead it vigorously with your hands until it becomes soft and pliable. It’s important to knead until it feels slightly sticky.

Rinse the kneaded bellflower root thoroughly under running water to remove all the saltiness. After rinsing, drain the water well using a sieve.

Heat a pan and add the prepared bellflower root. Add 1 tablespoon of tuna extract. Season with roasted salt to your taste. Drizzle in a generous amount of canola oil or cooking oil. Stir-fry the bellflower root until it softens and wilts, stirring frequently to prevent burning over medium-low heat.

Once the bellflower root is partially stir-fried, pour in 150ml of the prepared kelp broth (or anchovy-kelp broth). Continue to stir-fry until most of the liquid has evaporated and only a little moisture remains. This step will make the bellflower root tender and moist.

Just before turning off the heat, stir in 1 tablespoon of sesame oil and a pinch of sesame seeds to enhance the aroma and flavor. The residual heat will be enough to meld the flavors.
